Arithmancy, Muggle Studies, Divination, Study of Ancient Runes and Care of Magical Creatures are the classes

There's also Alchemy if demand is high enough for years six and seven, as well as apparition for those old enough, or nearly so

Personally, divination, ancient runes, and possibly care of magical creatures
As per Hogwarts rules, you must choose at least two, and alchemy doesn't count, cuz it's per demand and the last two years
