Any chance someone could explain the quests to me? I've been wanting to start one but it's all so intimidating

Usually the items asked for in a quest are items you get from fishing.
Once you have collected the items asked for, you give them to whichever goddess gave you the quest. Eventide is the moon and Aurora is the sun icon. Click on whichever icon of the goddess you want to do a quest for then click accept quest at the bottom and the required items will be shown and the amount of each you need and have. The box around the items is also red when you don't have the item and green when you have the required items.

...and if you don't have an item, like a shop item, that is being asked for then you can go get one and come back. The items I have noticed are generally in the secret garden shop (the rain boots, fairy ring, seedling etc).

Do not click cancel unless you are foregoing that turn because you will have to wait 12 more hours to try again. If you have the item(s) requested and you want to part with them then press "turn in".

You can do both quests every 12 hours.

If you try at least you have a chance of getting something, if you don't try then you forfeit any chance at all. Better to try and lose then not try and have lost the opportunity.
