1. Seeing how the bread is prepped could also explain why it could've come out at 11 inches. Not stretching the dough out long enough can do that.
2. There's a ruler on the counter for the worker to help them know where to cut the sandwich for footlong or 6 inch, some subways (not all because the one I work at doesn't do this), you can order a 3 inch sub. It's not a ruler per se, but it tells where to cut it, and 6 inches is clearly the halfway mark. But as I said, how the bread is prepped can really effect the length of the bread. Some could come out a little longer or shorter than others because you have to stretch it out a little bit to fit the length of the pan.
I Shall Engrave That worker must be mistaken, because you did ask for a 6 inch because 6 inches IS half of the footlong.
