I actually like cheese melted on my french fries but not sure about cheese and gavy although I suppose it is like mashed cheese potato with gravy? Just not one for globs of cheese or strong flavored cheese.

Calea - If you love cheese, you should love the cheese tasting in France! Google search if they have any going on when you are there, but I am sure any of the bistro's would have cheese plates you can get.

I watched a cooking show once that talked about the difference between cheese philosophies in North America vs. Europe. In Europe the view cheese as being "alive" (no refrigeration!), but in North America, we like it "dead" (their term not mine--for refrigerated). So I'm not so sure I'd like cheeses in other countries even though I eat cheeses here in the USofA. (Yes, they scared me!) :0

Interesting! I guess I always consider cheese is dead. I think of yogurt as alive, but cheese and milk seem more dead. Maybe it is because of my intentions when eating the product? I eat yogurt for the bacteria to help digestion, but I eat cheese and milk for taste and texture.
I wonder if it depends on the kind of cheese! Mozzarella (especially string cheese) is heated so the proteins line up right so I imagine it would be more (or completely) dead. It probably also depends on if it is pasteurized or not. As we see from the Ancient Egyptian cheese that was discovered, even if cheese isn't alive there can be something on it that is... :)

My rule of thumb/line in the sand re: cheese is if it smells like sewage, smelly feet or bad hygiene, I won't eat it! Dead or alive! :)
