i'm not sure about fresh bananas in sandwiches (might give that a try sometime, currently have a bundle of those smallish bananas), but banana bread is so good and easy to make!

I've only paired oats with berry or mango jams, since they're p much the only jams I buy lmao but tbh I think any jam could work, just make sure it doesn't get acidic enough to curdle milk, if ur adding it.
