Oh the crunchy thing inside the pic is called Chicharrón in the Philppines, which is essentially deep fried pork belly or skin with some meat attached. Taste great as side dish with alcohol. Koreans be having shops that mainly sells it too except we have to BBQ it ourselves
Chinese eat it soft after cooking it hours inside the soup xD;;; not the best way to eat it, but if you just want the collagen I guess that might work
