I tried making beef jerky in a dehydrater that fits on top of the counter. It took several days, but for the smoked flavor you had to add a liquid smoke, which I think also helped perserve it? I mean when you think about it...is it really cooked?
A friend of my parents smoked salmon and they seemed to really like it.
