Growing potato's big depends on what kind of soil they are growing in (soft versus clay or hard soil) the smae for carrots and other root vegetables. The nice thing about potato's is you can cut the budding potato into sections and get more then one plant out of one potato. Potato's don't need much care so you can basically plant them, water them once in awhile and if there are no rodents to eat them, have a crop within a few months and they are so good to eat fresh out of the ground. My Mom would do a whole big patch of potato's, and then store them in a cool place, I have just tried a few.
