Depending on whether where you lives gets down to freezing determines what kind of plants you can grow. My roses generally are hardy enough to endure a few days of freezing temperatures in a row and my cacti are quite hardy except for some of the succulents but they will generally only get soggy from the frost around the edges.
Colder temps you can do crocus and the paper whites right now. If you are where it is hotter you might want to stick with succulents.
Japanese rock gardens can be very soothing but you still have to maintain them.
