That's a tricky one because it depends where you are. The far north the sun barely sets in the summer and it doesn't burn/dry up, people just use dark curtains to block out the light.

What is if the grass wasn't green?

Then there wouldn't be any chlorophyll in the grass, though I don't know how that'd affect the environment. I'm gonna guess that the grass will have to find another chemical or molecule or something to help with photosynthesis, or just ditch that completely and go on full Calvin Cycle mode!
