We'd take the Elven way out, assuming that's still possible, if it's not we'd probably entertain ourselves in all sorts of hedonistic ways. Some immortals would get trampled by the stronger, some would go insane, some will do nothing but fight, and some immortals would go cloister themselves off somewhere and live peaceful hermit lives. People in love with learning will set out to conquer the mysteries of the earth and space and we'd probably slowly spread out across the galaxy doing whatever was possible to ease the boredom.
Revolutions are about to get very interesting. Humanity will advance in torture techniques and human cruelty will be rather astounding to see now that we can't die but can still hate each other's guts. Death penalty will be meaningless, but there will be so many more ways for people to be punished. Immortals would group up depending on their ideals and form nations and so begins the eternal war or an uneasy cease-fire.
Human mental states will probably deteriorate as human minds try to cope with emotional scars that build up in their lifetime. Happiness will be harder to reach until people learn to find a different sort of enlightenment and serenity. It'd be a new age with unparalleled heights and a deep shadow. When you live too long, life can grow very painful.
