the only way for someone to ward her off is iron, however she stalks her victims for months beforehand and sends her minions in to steal any iron, so as to reduce risks.

Well you find vampires in the service of the church in several movies and novels same with demons.
Besides in many stories demons are fallen angels so it's not too much of a stretch to have them have holy as element.
