Once my pets hatch or evolve I give them immortality and don't touch them (except the rock pets because that was a tester pet) so that I have a record of what they evolved or hatched at.

how is cc going to make a living in windlyn taking care of pets for feathers til they evolve if we get evolving potions?

Immortality potions only make it so that the pet does not die, it does not evolve them. You still have to inter act with the pet to have it evolve.

Youth potion means the pet will never evolve past the level you gave it the potion at, and if you do not give it an immortality potion as well then you will have to continue to feed it or it will die.
