Trying to make my own cheese sauce for Mac and cheese. Messed both attempts up. Here's what I learned:

1. Be careful reading the ingredients. I put 4 cups of flour in instead of 1/4 cup. How did I do it? I was going to add it in via tbs but when i said one fourth cup in my head, i heard 4 cups and looked up how many tbs are in 4 cups and put in 18 tbs into it.

2. Do NOT use cheap cheese. It will not melt. Because I've tried to melt it for 10 minutes.... it just clumped.

Do remember this advice.

3. I'm a disappointment to Gordon Ramsay and I should be ashamed. How does one mess up mac n cheese?

Sounds like you were trying to make cheese biscuits!
Psst: for cheese sauce, melt the butter and then gradually stir in a little flour until pasty like then mix in a little milk until a little runny, then add a little flour to thicken and more milk etc until you have the amount you want. At the very end put in grated cheese a little at a time and keep stirring until it is the consistency you want.

The cheese I bought wouldn't melt. Everything else went smoothly.

That's what I get for using dollar store cheese. It's so processed it's not really cheese anymore. Just a cheese-like product.

While the latest batch was not perfect (I mean, it tastes like mac and cheese and the cheese actually melted because i used sargento and that's a good cheese, leaving out American cheese makes it taste like melted cheddar [basically what it was] and not the typical cheese flavor of mac an cheese.)

I know how to make a good batch. I might share the recipe, even if it's not my own.

But now to figure out what to make next. Hmm .

I do love cooking.

That's how you make your own recipes. You use a recipe and then change things up to make them your own.

Technically, the cupcake recipe isn't 100% mine. I only added pyffing mix to it. And how to give a filling. But I did t really change it up enough to really call it mine.

But cooking is all about experimenting and find out what works and what doesnt.
